The day begins at six in the morning at the Cours Saleya market in Nice with Chef Marchais. The morning is spent selecting the catch, the vegetables, and the cheese. By afternoon you are in the kitchen watching preparation. By evening you are seated at the pass for eight courses composed entirely from what the morning produced. It is the most complete version of what the restaurant does.

Nice Market Visit
Depart the estate at 06:00 with the chef. The Cours Saleya is at its best at this hour — the fishmongers unloading, the produce still cool, the market vendors known by name.
Kitchen Preparation Session
Return to the estate kitchen and watch the afternoon's work — the filleting, the reducing, the composing of eight courses from the morning's selections.
Eight-Course Dinner at the Pass
Seated at the kitchen pass, four guests receive each course directly from the chef — with the explanation of every decision made that day to compose it.
Wine Pairing Included
The sommelier pairs each course from the estate cellar — a sequence composed in advance and adjusted to what the market ultimately provided.
Recipe Notes to Take Home
Each guest leaves with handwritten recipe notes from Chef Marchais — not exact quantities, but the logic and the technique behind each dish.
